A Season of Celebrations

The end of May not only ushers in summer, but a season of celebrations. Our summer weekends are filled with invitations for graduations, first communions, Father’s Day and Memorial Day, as well as a couple of our own parties.

Planning a crowd pleasing, gluten free menu does not have to be overwhelming. One of my favorite tricks is to make mini cupcakes out of a standard, two layer cake recipe or boxed mix. Scoop ½ tablespoon of prepared cake batter into a liner filled mini cupcake/muffin pan. Bake according to the recipe directions. Most mini cupcakes will be done baking in 8-15 minutes. A two layer cake recipe will make approximately 75-80 mini cupcakes. Topped with a dollop of frosting, they are ready for everyone to grab.
