Meatloaf Burgers
This is a great recipe for a second chance dish. You can be creative with the vegetables and/or sauce that goes into or on top of the meatloaf.

Meatloaf Patties
  1. Preheat oven to 350º
  2. Add olive oil to a large non-stick pan, add the onions and celery to the pan
  3. Cook for 10 minutes and remove from pan, set aside and allow time so they are cool to the touch
  4. Combine all the ingredients in a large mixing bowl. With clean hands, mix all the ingredients together until well incorporated
  5. Form into equal sized patties. If freezing see, wrap individual patties in plastic wrap, store in airtight container, label and store in the freezer
  6. Bake for patties for 20 minutes at 350º turn patties over and cook for an additional 20 minutes
  7. If adding cheese, about 10 minutes before the meatloaf patties are done cooking, remove from oven and add the slices of cheese. Return to the oven and cook for the remaining 10 minutes.
  8. Serve with roasted tomato ketchup (optional)
Breadcrumbs
  1. Leftover gluten free bread makes perfect breadcrumbs. Cube leftover bread and place on a baking sheet. Bake in a 350⁰ oven until crispy. In a food processor, pulse cubes into a fine crumb. Pour bread crumbs through a mesh sieve into a storage container. Return large pieces to the food processor and pulse to a fine crumb. If your bread crumbs do not process into a fine crumb, re-bake a few more minutes until dry, then reprocess. Bread crumbs will last longer if kept in the freezer in an airtight container.
Recipe Notes

You can combine a number of recipes for some meal planning and second chance dishes. You can use a marinara sauce in place of tomato sauce.  You can also use either the marinara sauce or the roasted ketchup to top off the meatloaf . Click here for the recipe for our roasted tomato ketchup.

Cold meatloaf sandwiches are a snap with the patties, all you need is the bread and mayonnaise.
