Instructions
  1. Preheat oven to 350º
  2. In a sauté pan add the olive oil, when the oil is hot add the onion. Cook for about 5 minutes on medium heat until the onion is translucent
  3. Add the red pepper and carrots and cook for another 5 minutes
  4. Rinse the rice under running water until the water runs clear to remove any excess starch.
  5. Add the rice to the onion and peppers and then pour rice mixture into a casserole dish and spread evenly over the bottom of the dish.
  6. In a saucepan, combine the chicken stock, salt and bay leaf and bring to a boil, cook for 5 minutes
  7. Add the stock to the casserole dish and stir well. Make sure to spread the rice mix evenly over the bottom of the casserole dish and cover
  8. Cook rice for 35 minutes
  9. Remove bay leaf and garnish with chopped parsley
