Glaze is one of the secret tools that bakers have in their back pockets. There are all types of glazes that add shine, flavor and moisture to pastry, breads and fresh fruit. One type of glazes helps preserve the freshness and moisture of fresh fruit. I used to buy a red strawberry glaze all the time but had to stop when my young daughter developed an allergy to food dye. This all natural berry glaze tastes delicious and is great for using with strawberries, raspberries and blueberries or any other dark colored fruits.
Use this berry glaze to coat berries prior to topping tarts or cakes or as a foundation layer for fresh berries. To use it as a foundation layer, simply brush or spoon the glaze on top of the cake or tart where you want to place your berries. The glaze will give the berries something to stick to, will keep them in place and prevent them from sliding off the cake.
Anytime you need to use berries, this glaze is a great addition and will replace the red artificial glaze with a natural product.

- 3 tbsp cornstarch
- 1/2 cup sugar granulated
- 1 cup berry blend crushed, your choice
- 2-4 drops food coloring (optional) use vegan food coloring if vegetarian

- If you would like your glaze to be smooth, process berries in a blender or food processor. If you prefer a chunkier glaze, crush them with a fork.
- To remove unwanted seeds, securely attach a cheesecloth to a small bowl with a rubber band then filter processed berries through the cheesecloth. This takes some time, but will result in a clearer glaze.
- Food coloring is optional, but will give your glaze a deeper, brighter color.
- In a small saucepan, combine all ingredients.
- Over medium-low heat, stir continuously until the ingredients have combined and begin to thicken.
- Remove from heat and store in a refrigerated, airtight, plastic container.
- If you need to thin out the glaze before use, add 1 tsp of warm water at a time until the glaze reaches the desired consistency.
