This is a quick tutorial on how to peel the skin off a tomato. Peeling tomatoes using this method, makes the skin slips right off the tomato making it super easy to make fresh sauce.

- 6 lbs tomatoes fresh, ripe tomatoes

Instructions
- Wash and core all tomatoes
- Cut a small X in the bottom of each tomato
- Fill a pan with water and bring to a boil. Lower heat so water is hot, but not a rolling boil
- Fill a bucket or sink with cold water and add ice. You want ice cold water for the tomatoes to stop the cooking process
- Put tomatoes in hot water and watch closely. It takes about a minute for the skin to start peeling from the tomatoes
- When the skin starts to peel use a slotted spoon to take the tomatoes out of the hot water and plunge them into your ice water bath
- Allow the tomatoes to cool for about one minute (you want to stop the cooking process) and then using a slotted spoon remove remove from ice bath. The skin should slip right off the tomato
Recipe Notes
I peeled 6 pounds of tomatoes to use in a fresh, simple tomato sauce base. It took me 20 minutes from start to finish to do all 6 lbs. You can use this method to skin any kind of tomato so long as they are ripe.
