When my family becomes incredibly busy and everyone is going in different directions, our diet is the begins to suffer. We began to juice as a way to get more daily nutrients and this antioxidant juice is a favorite of mine.
At first, our juices were all very sweet because we used a lot of fruit. The longer we juiced, we phased out fruits and used more and more vegetables.
Beets are a great addition to any juicing regiment, packed with important nutrients like B6, magnesium potassium and manganese. They provide your body with antioxidants, while helping your body detoxify and also adding sweetness.
If you are using a juicer, use the whole beet and carrot. Don’t forget to also use the greens. Vegetable greens are loaded with nutrients. If you don’t use the greens in your juice, chop your beet greens up to serve in a salad and save your carrot greens for your next soup stock.

- Dice vegetables into small pieces.
- Add apple juice and cucumber into blender. Pulse until cucumber is broken up and then blend until liquified.
- One at a time, add beets, carrots, kale and spinach, pulsing until broken up and then blended until liquified and combined.
- If a smoother juice is preferred, pour juice through a fine sieve or simply allow the juice to settle before drinking.
- If needed or desired, once vegetables are juiced, add apple juice to taste.
- Serve immediately.
