Bacon Date Bites

I am always looking for appetizers that are not only gluten free, but delicious and easy to make. I keep a list of never fail recipes that I can make up quickly for a party or get together. These bacon date bites beautifully fit that bill. When you are in need of a quick appetizer, this is the perfect recipe for you.

It only takes three ingredients to make up these amazing bites. Dates are not necessarily the first thing I think of when I think of appetizers, but combined with the goat cheese and bacon, the dates add just a touch of chewy sweetness.

These bites are permanently on my no fail list. Weather permitting, we have even made these on our grill. It adds just an another delicious layer of flavor.

To cut down on clean up, you can put these bacon date bites together the day before you need them. Assemble the bites according to the directions through the fifth direction. Place assembled bites on a baking sheet, wrap in plastic wrap and refrigerate. Remove them from the refrigerate and let them warm up to room temperature before the final bake.

Instructions
  1. Slice raw bacon in half. Par cook the bacon in a 400° oven, about 6-7 minutes.
  2. While the bacon is cooking, pit and clean the dates as necessary.
  3. Fill the dates with 1/4-1/2 teaspoon of the goat cheese and set aside.
  4. When the bacon is par cooked, remove from the pan and allow to cool enough to be handled, about 3-5 minutes.
  5. When the bacon is cool enough to be handled, wrap each filled date with one of the half slices of bacon. Secure with toothpicks.
  6. Bake in a 400° oven, turning every few minutes to crisp all sides, until bacon is completely cooked. If you desire extra crispy bacon, switch your oven to low broil for the last few minutes, turning frequently and keeping a close eye on the bacon so that it does not burn.
  7. Remove from pan onto paper towels to drain any excess oil and cool.
  8. Remove toothpicks and serve immediately.
