Around us somehow, Spring Break and the Easter holidays always seem to fall in the same week. In addition to our unpredictable weather, our house is crowded with holiday company and everyone home from school. Cold weather combined with stir crazy children can be a lethal combination and that is exactly why we created this trail mix.
I learned a long time ago that busy hands are happy hands. We always keep a bin full of crafts and board games for bored hands. We also spend a lot of time baking together. On one very challenging day, we headed for the kitchen, so all the ingredients for this mix came straight out of our pantry.
This mix is perfect for little hands to make with just a little bit of help. The recipe is very flexible, so just use whatever you have in your pantry. A little sweet and a little salty, mixed with some marshmallows and chocolate, this Cotton Tail trail mix is addictive. And it will also help keep hungry hands out of your kitchen while you are trying to finish your Easter meal.

- 2 cups square cereal gluten free flavor of your choice
- 1 cup pretzels gluten free
- 1 cup oat O's cereal gluten free of your choice
- 1/2 cup candy covered chocolates gluten free, Easter colors
- 1 cup mini marshmallows gluten free, use vegan marshmallows if vegetarian
- 1 tsp sanding sugar
- 1 tsp sprinkles gluten free
- 12 oz white chocolate chips melted
- 1 cup nuts (optional)

- Combine all ingredients except for the white chocolate chips, in a large bowl. Mix well.
- Melt white chocolate chips in a microwave safe bowl 30 seconds at a time, stirring after time, until chips are melted.
- Add melted white chocolate chips to bowl and mix well until everything is coated.
- Pour mix onto a silicone mat or parchment paper covered baking sheet and spread out evenly.
- Place baking sheet in the refrigerator for 20 minutes until firm.
- Break into small bite size pieces and store in a plastic storage bag until needed.
