Whenever I spend a lot of time working, I don’t want to work at making dinner. I like to be able to relax a little before I need to figure out the next meal. Fortunately, I have this cranberry salad with blue cheese. I love all the different flavors as well as the textures.
Make this delightfully refreshing salad with a combination of cranberry, apple, pear and blue cheese and serve it with our homemade raspberry vinaigrette. It is perfect for lunch or dinner.
Try this salad with a fresh grilled chicken breast for a more filling meal.

- 6-8 cups lettuce spring mix
- 1 pear cored, halved and thinly sliced
- 1 apple cored and diced
- 1 cup cranberries dried
- 1 cup pecans chopped
- 1/2 cup blue cheese crumbled (omit for dairy free)
- 1/2 cup bacon cooked, drained and crumbled (optional)

- Arrange spring mix in a large shallow bowl.
- Slice pears in half and then make thin slices out of the halves.
- Arrange pears in the bowl.
- Mix cranberries, apples, pecans and bacon (if using) in a separate bowl and then sprinkle in the middle of the bowl.
- If desired, top with crumbled blue cheese.
