Gluten Free Garlic Croutons

These gluten free garlic croutons are a great idea for using leftover bread. Renée and I were laughing because it is also great for those bread recipes that do not quite work out the way you intended. Use them in soups and salads; you can also add flavors to the croutons as well. This recipe is for garlic croutons, but you can make rosemary, thyme or any other flavor you want.

Instructions
  1. Tear or slice bread into cubes
  2. Heat olive oil in a large non stick pan
  3. Add smashed garlic cloves to oil. You can crush the garlic by laying your knife flat over the garlic on a cutting board and and hitting the knife with the palm of your hand
  4. Allow the garlic to infuse with the oil for about 6 minutes over medium heat or until the garlic turns a beautiful brown color. Remove the garlic and add the bread crumbs
  5. Sauté the bread crumbs turning them over frequently
  6. Add salt and pepper to taste as the bread crumbs are cooking
