For me, granola is the food of champions. We eat this granola all day-on top of cereal, as cereal, as a snack or on with yogurt or ice cream. It has no added sugar and is delicious. A little sweet and a little salty, this snack will satisfy everyone.

When we are headed out on a road trip, we pack up enough jars to hold off hunger pangs until we can find a good place to eat.

We have resorted to making a triple batch of granola every Sunday night. We pack it into mason jars so that it is ready for everyone to grab and go, or to break up as a topping.

My daughter has taken over the responsibility of granola production and does a great job. With supervision, this recipe is great to get the kids involved. We use our food processor to chop up everything quickly, but little hands can help with all the stirring that needs to be done.

Do not let the list of ingredients scare you off – this is a very simple recipe for a delicious whole food snack.

Instructions
  1. In a large bowl, combine the first 11 ingredients and stir until all are well combined.
  2. Melt coconut oil and add to bowl, stirring until all ingredients are well coated.
  3. Add vanilla to the mixture and mix until everything is well incorporated.
  4. Pour mix on to a silpat or parchment paper baking sheet. Cover with another piece of parchment paper and with another baking sheet and compress mixture as much as possible.
  5. In a 325 degree oven, bake on the middle rack for 30 minutes, turning halfway through.
  6. Remove granola from the oven, when the edges are browning. Set pan on a cooling rack and allow to cool for one hour.
  7. Break into pieces and store in glass or plastic airtight containers.
