- 1 batch chocolate chips cookies see below for recipe
- 2 quarts ice cream of your choice

Instructions
- Prepare cookies as in recipe, roll one tablespoon of dough in to ball and place on silpat or parchment paper covered baking sheets, flattening slightly.
- Bake cookies, 8-10 minutes, just until the edges turn golden and the bottoms are lightly golden.
- Place pan on cooling rack for five minutes and then remove cookies from pan to cool.
- Assemble sandwiches by placing desired amount of ice cream in between two cookies and lightly pressing together. Serve immediately if desired or wrap in plastic wrap and freeze.
- Freeze 6 hours or overnight. Once frozen, place wrapped sandwiches in a freezer bag to store until needed.
