When I need an appetizer that I know will be a hit, I make these mini taco appetizers. This is an easy appetizer to make for entertaining, potluck as well as a lazy Sunday at home.
Of course, you can make these mini tacos with packets of store bought taco seasoning, but if you want to make your own, try ours.
You can prepare the taco meat ahead of time, to make it a snap to throw these together.
Just a word of warning – you may want to make extras, they never last long.

- 1 bag tortillas (gluten free) scoopable -you will need about 2 dozen
- 1 pound ground beef
- taco seasoning (gluten free) 1 package or ¼ cup home-made (see note at bottom)
- 1/4 cup water
- 1/2 cup cheddar cheese shredded mild
- 1-1 1/2 cups sour cream
- 2.25 oz black olives diced
- 1/4 cup green onions finely chopped
- 1/4 cup cilantro finely chopped

- Preheat oven to 325º
- Mix together the green onion and cilantro into a small bowl
- Brown ground beef or turkey and then drain off any excess grease. Return meat to pan and then add taco seasoning and stir, slowly stir in water
- Simmer meat and taco seasoning for 5 minutes stirring occasionally
- Arrange tortillas on a baking sheet
- Spoon in seasoned ground beef and sprinkle with cheese
- Bake for 5 or so minutes until cheese is melted
- Spoon a dollop of sour cream on each tortilla
- Put about 1-2 black olives on each tortilla
- Sprinkle combination of green onion and cilantro on top of tortillas
- Arrange on a platter and serve
