We love popcorn in our home. In my pantry, you will always find an assortment of granola bars, granola, protein bars and powder and a whole selection of salty snacks. However, it is unusual for a night to go by when someone isn’t snacking on popcorn. It just seems to be the perfect snack for anytime. Everyone in our home has their own favorite take on these popcorn bars, asking for anything and everything from hot sauce to cinnamon sugar to suit their own taste.
My daughter loves to mix salty and sweet with her popcorn. Her favorite combination is cashews, raisins, pretzels, marshmallows and chocolate chips. Almost every night, she can be found having her popcorn mix before heading upstairs for the night.
These bars are my take on a portable version of her favorite snack.

Instructions
Pop your popcorn. Make sure that any unpopped kernels do not make it into the mix.
In a large bowl, measure out popcorn, nuts and if desired, raisins.
Melt butter and then add marshmallows, stirring until marshmallows are melted. If using a microwave, melt in 30 seconds intervals, stirring after each time.
Add marshmallow mixture to popcorn mix, stirring until all ingredients are well coated.
Once everything is coated and the mix has cooled a bit, add chocolate chips and any additional marshmallows, if desired, stirring until well distributed.
Line an 11x17, or if you like thicker bars, a 9x13 pan with parchment paper.
With buttered or cooking sprayed hands, press popcorn mixture into the pan, pressing firmly into the pan.
Chill or let stand until mixture is firm.
