Sausage and Herb Stuffing

Everyone always raves about the roasted turkey served on Thanksgiving, but my weakness is all the side dishes. It is not unusual for me to eat so many sides, that I completely forget about the turkey. I love all the different tastes and textures. For me, that is what Thanksgiving tastes like. I have made this gluten free sausage and herb stuffing for years now. Last year, someone finally noticed that the gluten free people in our family were eating the stuffing. They were very surprised that it was gluten free even though I have been cooking gluten free for years. Gluten free cooking is amazingly delicious!

This sausage and herb stuffing has all the flavors and smells of Thanksgiving. It is so good, it would be a waste not to serve it year round. Since this recipe is to serve eight to twelve people, for a regular day meal, cut the recipe in half.

To cut down your prep and clean up time, the vegetables for the stuffing can be prepped ahead of time, so on Thanksgiving, you just need to assemble your stuffing and pop it in the oven, while you finish your other preparations.

Instructions
  1. Dice onions, celery, carrots, and mushrooms into 1/2 inch cubes. Keep separate.
  2. In a large sauté pan, melt the butter.
  3. Add the onions and cook for 10 minutes or until translucent.
  4. Add the sausage and cook until no longer pink, about 10 minutes.
  5. Add the celery, carrots, mushrooms, thyme and sage.
  6. Cook for 10 minutes, mixing well to incorporate the flavors together. Please note: if preparing ahead of time, allow to cool and store in an airtight container until ready to use. If cooking now, preheat the oven to 350°.
  7. Add the breadcrumbs and fold ingredients together gently.
  8. Spray a baking dish with cooking spray. We recommend that you do not use a glass baking dish.
  9. Once the breadcrumbs are incorporated, add stock, and fold ingredients together gently and immediately place in the prepared casserole dish. Please note: Once the stock is added, gluten free breadcrumbs start to break down, so you want to handle it as little as possible.
  10. Bake at 350° for 35 minutes.
