There are times when I just run out of ideas for dinner. There were also lots and lots of times when my kids were young that they would gaze at me with those adorable, little faces and say, “Really, that again?” Ugh. Cue the Spaghetti Pie.
The challenges of feeding children are never ending. They need food that tastes great, looks good and is something that they will actually eat.
Spaghetti that looks like a pie – it always made my kids smile and they were always happy for dinner time.

Ingredients
- 1/2 lb spaghetti or pasta of your choice (gluten free)
- 2 tbsp butter unsalted
- 2 tbsp olive oil
- 1/3 cup parmesan cheese
- 3/4 cup ricotta cheese
- 1/2 cup mozzarella cheese
- 1 egg
- 1/2 onion chopped, optional
- 1/2 green pepper chopped, optional
- 1/2 lb ground beef may substitute turkey or chicken, omit for vegetarian
- 1 cup marinara sauce gluten free

Instructions
- Prepare pasta as instructed on package. Do not overcook the pasta.
- Rinse pasta well with cold water in colander. Combine pasta with butter, olive oil, parmesan cheese and 1/3 cup of the marinara sauce, tossing until completely coated.
- Place pasta in a cooking sprayed pie pan and press into pan.
- Combine ricotta and mozzarella cheeses with the egg. Place in center of pasta.
- Sautee green peppers and onion until soft and translucent, if desired. Brown ground meat and drain.
- Combine meat, green peppers, onions to the remaining marinara sauce.
- Place meat mixture on top of cheese mixture.
- Cover loosely with aluminum foil and bake in a 350 degree oven until warmed through.
- Allow to sit 5-10 minutes before serving.
