I love tomatillos combined with fresh cilantro, lime and jalapeño for some homemade salsa verde. This is an easy recipe for Tomatillo Salsa Verde that I use for salsa with chips and it works absolutely great as a marinade for chicken, pork and as a topping for fish. When marinading with the salsa, marinade 24 hours for optimal flavors.

Ingredients
- 1 lb tomatillos husked, washed and quartered (about 8 tomatillos)
- 1 yellow onion small, quartered
- 1 jalapeño seeded (optional) and diced
- lime juice juice of 1 lime
- 1/4 tsp cumin ground
- 1/2 cup cilantro loosely packed
- 1 clove garlic peeled and diced
- 1/4 cup vinegar distilled, white

Instructions
- Place tomatillos, onion, jalapeño, garlic, lime juice and cilantro in high powered blender or food processor; blend well
- Place tomatillo blend in a saucepan and add cumin and vinegar; stir
- Cook on medium heat for 10 minutes
- Let cool; you can keep in the refrigerator for up to one week
