Walking Tacos. I remember the first time I heard someone talk about them. For the life of me, I couldn’t figure out what they were talking about. My son was playing park district baseball with Saturday afternoon double headers. Because of the long day, the team mom called a parent meeting to discuss what everyone could bring for the team lunch in between the games. One mom offered to bring walking tacos. My life has never been the same. I learned so much from being a baseball mom, and these tacos were definitely a bonus.
Because this recipe is easy to double or triple, it is perfect for feeding a crowd of hungry people. I have served these tacos at block parties, Super Bowl parties, double headers, and post dance parties. Any occasion with lots of people to feed is perfect for this recipe.
I set up a table with my slow cooker, set on warm and filled with taco meat next to bowls of toppings, so that everyone can create their own tacos.
You can save time on the day you need these tacos by cooking the taco meat ahead of time. You can double our taco seasoning recipe or use gluten free store bought packets. Store your cooked taco meat in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months. On the day that you are serving your tacos, just warm up your taco meat and prepare your toppings.

- 2 lbs ground beef or other ground meat
- 2 pkts taco seasoning gluten free-I used McCormick
- 12 bags of chips snack size, I used Fritos©
- 4-6 cups shredded cheese any type
- 1/4-1/2 cup jalapeño slices
- 1/4 cup black olives chopped
- 3 tomatoes finely chopped
- 3 green onions finely chopped
- sour cream
- guacamole
- avocado

- In a skillet, combine ground beef and taco seasoning and over medium heat cook until ground beef is browned and thoroughly cooked.
- While beef is browning, prepare toppings. Place cooked taco meat in a slow cooker set on warm.
- Before opening, break up chips inside each chip bag. Once chips are broken, open bags at the top or cut a hole in the center.
- Scoop 1/2 cup of taco meat into the open chip bags.
- Top with desired fillings.
- Insert fork, mix and enjoy.
